These double chocolate vegan protein muffins are the absolute best snack to fuel your day! Made with just 11 simple ingredients and made in one bowl in the food processor, you will definitely want to make these muffins weekly. They are so decadent and fudgy, and the best part is they are made with good-for-you ingredients and simple pantry staples!

Ingredients
  

  • 1 medium avocado
  • 1 medium banana
  • 1/3 cup almond milk or any plant milk of choice
  • 1/4 cup maple syrup
  • 1 tsp vanilla
  • 1/4 cup Good Protein Chocolate protein powder
  • 1/4 cup cocoa powder
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 1 cup all-purpose flour
  • 1/2 cup chocolate chips

Instructions
 

  • Preheat oven to 350℉.
  • Line a muffin tray with muffin liners and set aside.
  • In a food processor or blender, add your avocado, banana, almond milk, maple syrup, and vanilla and pulse until combined.
  • Add in chocolate protein powder, cocoa powder, baking powder and baking soda, and all purpose flour and pulse until well combined. Scrape down the sides with a silicone spatula to ensure no flour remains.
  • Fold in your chocolate chips with a spatula and mix well.
  • Using a spoon or cookie scooper, scoop muffin batter and fill the tray. Fill about 3/4 of the way full. Bake for 20 minutes or until a toothpick comes out clean.

Notes

How to store: Place in an airtight container and keep in the fridge for one week.
