Ingredients

  • 2 tbsp ground flaxseed (2 tbsp flaxseed + 6 tbsp warm water to create flax eggs)
  • 2 cups oats rolled or quick oats
  • 1 tbsp hemp hearts
  • 1 tsp cinnamon
  • 2 tbsp protein powder
  • 1 tsp vanilla extract
  • 1/4 cup applesauce
  • 1/2 cup smooth peanut butter
  • 1 tsp baking powder
  • 1 1/3 cups oat milk or milk of choice
  • 1 whole apple peeled and diced
  • 8 slices apple to top each square of oatmeal

Instructions

  • Preheat oven to 350℉.

  • In a large bowl, combine all your ingredients together except the apples. Whisk until well combined.
  • Fold in the diced apples with a spatula until evenly incorporated.
  • Grease a rectangular baking dish, then pour in the oatmeal mixture. Top with 8 thin apple slices (every apple slice will be in the center of each piece of baked oatmeal).
  • Bake the oatmeal for 55 minutes at 350F or until the center is fully cooked and a toothpick comes out clean.
  • Let cool completely before cutting into 8 pieces.
  • Top with yogurt, more apple slices, maple syrup, and enjoy.
