This apple baked oatmeal is the perfect breakfast to meal prep. It's great for busy mornings or when you're craving something warm and cozy. It's packed with good-for-you ingredients like oats, peanut butter, and protein powder to keep you fuelled all morning.
2tbspground flaxseed (2 tbsp flaxseed + 6 tbsp warm water to create flax eggs)
2cupsoatsrolled or quick oats
1tbsphemp hearts
1tspcinnamon
2tbspprotein powder
1tspvanilla extract
1/4cupapplesauce
1/2cupsmooth peanut butter
1tspbaking powder
1 1/3cupsoat milkor milk of choice
1wholeapplepeeled and diced
8slicesappleto top each square of oatmeal
Instructions
Preheat oven to 350℉.
To a small bowl, create your flax egg by combining ground flaxseed with warm water. Let it sit for 5 minutes.
In a large bowl, combine all your ingredients together except the apples. Whisk until well combined.
Fold in the diced apples with a spatula until evenly incorporated.
Grease a rectangular baking dish, then pour in the oatmeal mixture. Top with 8 thin apple slices (every apple slice will be in the center of each piece of baked oatmeal).
Bake the oatmeal for 55 minutes at 350F or until the center is fully cooked and a toothpick comes out clean.
Let cool completely before cutting into 8 pieces.
Top with yogurt, more apple slices, maple syrup, and enjoy.
Notes
How to store: Place in an airtight container and store in the fridge for up to one week.
