Crunchy Pistachio and Pear Salad

This crunchy pistachio and pear salad is the perfect thing to make as the weather begins to warm up. It's filled with the perfect mixture of flavour and different textures, and is great as a side or enjoyed as a meal with protein mixed in or on the side. Every bite is filled with crunch from the pistachios, lettuce, pomegranates, and shallots, plus some chewiness from the dried pears.

For the Salad
- 2 handfuls lettuce spring mix or any lettuce of your choice
- 1 whole shallot diced
- 2 stalks green onions (scallion), chopped
- 5 pieces dried pears I used the brand Nutterie - chopped into pieces
- 1/4 cup roasted pistachios chopped (measure 1/4 cup whole)
- 1/2 whole pomegranate (half of the seeds in the pomegranate)
- 3 tbsp crumbled feta can use regular or vegan feta
- 1 whole pear cut into thin slices, to top your salad
For the Dressing
- 3 Tbsp extra virgin olive oil
- 1/2 tbsp apple cider vinegar
- 1 tbsp tahini
- 1 pinch salt and pepper to taste
- 1 tsp dried parsley
To a large plate or bowl, add your lettuce.
Top with diced shallots, green onions, chopped dried pears, chopped pistachios, pomegranate, and crumbled feta. Carefully place your fresh pear slices on top of the salad.
In a small jar or bowl, make the dressing by combining all ingredients together and mixing until well combined. You can use a handheld electric frother for the best results.
Pour the dressing over your salad, serve and enjoy!
How to store: If you plan on eating this later, store the salad and dressing separately until ready to assemble and eat. If you have any salad mixed in with the dressing that is leftover, you can keep in the fridge for 1 day.
