Easy Vegan Cinnamon Sugar Donuts

These vegan cinnamon sugar donuts are easy to make, so fluffy, and taste better than any store-bought donut! Plus, they're baked and not fried. These cinnamon sugar donuts are made with pantry-staple ingredients like brown and white sugar, applesauce, vegan butter, almond milk, and more. They take about 35 minutes to come together and will be sure to please anyone who takes a bite out of these donuts!

Ingredients
  

  • 1/2 cup vegan butter, melted
  • 1/4 cup brown sugar, packed (use golden yellow or light brown sugar)
  • 1/2 cup white granulated sugar
  • 1/4 cup applesauce
  • 1/2 cup almond milk (or oat milk)
  • 1 tsp vanilla extract
  • 1/2 tsp cinnamon
  • 2 cups all-purpose flour (spoon and level method - make sure to not pack in your flour!)
  • 1 tsp baking powder

Cinnamon Sugar Coating

  • 2/3 cup vegan butter, melted
  • 3/4 cup + 3 tbsp white granulated sugar
  • 1/2 tbsp cinnamon

Instructions
 

  • Preheat oven to 350℉.
  • Take your donut tray, and spray with olive oil. Use a silicone basting brush to spread the oil in each mold.
  • In a medium sized bowl, add melted vegan butter, packed brown sugar and white granulated sugar together and mix with a whisk until well combined.
  • Next, add applesauce, almond milk, vanilla extract, and cinnamon to your bowl and whisk until all ingredients are combined.
  • Add your flour and baking powder and whisk until just combined, and no dry ingredients are visible.
  • Use a piping bag or plastic bag (make sure to cut one of the corners if using a plastic bag) and scoop your batter into the bag. Pipe the batter into each donut mold and fill 3/4 of it. You want to leave some room for them to grow when they bake. Repeat for remaining batter. Place in the oven and let cook for 15 minutes.

Preparing your cinnamon sugar coating

  • In a small bowl, melt your vegan butter and set aside.
  • In a second small bowl, mix the cinnamon and white granulated sugar together.
  • Once your donuts have baked, let them cool for about 5-10 minutes in the donut trays, then transfer to cool on on a wire rack.
  • Take your donut, dip both sides in the melted butter, then dip the donut in the cinnamon sugar mixture and coat evenly. Place back on wire rack and repeat for the other donuts.
  • Enjoy!

Notes

How to store: Place the donuts in an airtight container and keep in the fridge for up to one week.
How to freeze: You can store these donuts in the freezer for up to one month.
