High Protein Rice Cake Bars (Vegan)

These high protein rice cake bars are the perfect healthy snack to keep in your freezer! They only take 10 minutes to make, and require just 6 ingredients! They have a delicious crunch from the rice cakes, and gorgeous sweet and salty flavour combination from the peanut butter, protein powder, and chocolate chips. They are such a healthy, easy snack to keep in the freezer whenever you're craving a healthy sweet treat!

Ingredients
  

For the Base

  • 5 whole rice cakes, broken into pieces
  • 1 scoop protein powder, I used Good Protein Salted Caramel, or flavour of choice (44 gram scoop)
  • 1/3 cup maple syrup
  • 1/2 cup peanut butter

For the Chocolate Topping

  • 1 cup chocolate chips
  • 1 tsp coconut oil

Instructions
 

  • Line a loaf pan with parchment paper and set aside.
  • To a bowl, break your rice cakes into small pieces.
  • To the same bowl, add protein powder, maple syrup and peanut butter and mix well until combined. It should be sticky and hold together.
  • Transfer the rice cake mixture to your loaf pan and press down evenly. Place in the freezer while melting the chocolate topping.
  • To a bowl, add chocolate chips and coconut oil. Melt in the microwave in 25-30 second increments, stirring in between until fully melted.
  • Pour chocolate on top of the rice cake mixture and let it set in the freezer for 20 minutes. Cut and enjoy!

Notes

How to store: keep in the freezer for up to one month.
