No Bake Banana Bread Energy Balls

No bake banana bread energy balls are the best morning snack for when you need a little boost! Made with bananas, oats, peanut butter, vegan protein powder and even more good-for-you ingredients that are pantry staples. They are made in 15 minutes and can be kept in the freezer and are ready to eat whenever you've got a craving!

Ingredients
  

  • 2 super ripe bananas, mashed
  • 1 1/2 cups rolled oats
  • 1 tsp of cinnamon
  • 1/2 cup peanut butter
  • 1 tsp coffee grains (optional but adds a nice flavour!)
  • 1/3 cup maple syrup
  • 1 tbsp flax seeds
  • 1 tbsp hemp hearts
  • 1 scoop vegan protein powder
  • 1/2 cup chocolate chips, or add as many as your heart desires - no judgement

Instructions
 

  • Mash bananas in a plate then place in a large bowl and proceed to add in the rest of the ingredients except chocolate chips. Mix all ingredients with a spatula until well incorporated.
  • Add in chocolate chips and mix until they are evenly distributed.
  • Prepare a pan lined with parchment paper and scoop the dough into balls with a cookie scooper. Dough will be slightly wet, this is normal!
  • Place balls in the freezer to harden for about 30 minutes-1 hour before enjoying.

Notes

How to store: Place in an airtight container and keep in the freezer for up to one month.
