Peanut Butter and Jelly Date Bark

Date bark has been all the trend lately, and who doesn't love a classic peanut butter and jelly? I love both so much, so I decided to combine the two and the result? An absolutely delicious, healthy, and high protein treat! You absolutely need to make this because it's so easy to make, it's no bake, and helps you hit your protein goals while enjoying some dates and chocolate. That's a win if you ask me!

Ingredients
  

  • 12 whole Medjool dates, pitted & flattened
  • 1 scoop Good Protein Peanut Butter protein powder (1 scoop = 44 grams)
  • 2 tbsp maple syrup
  • 1/2 cup creamy peanut butter
  • 3 tbsp strawberry/raspberry jam or homemade jam
  • 1/2 cup semi-sweet chocolate chips
  • 1 tsp coconut oil
  • optional flaky salt, to top

Instructions
 

  • Line a small baking tray with parchment paper. Split dates open and press each one down, making sure they overlap slightly so they stick together. You can add another piece of parchment paper over the dates and use a rolling pin to flatten the date layer.
  • To a small bowl, combine the protein powder, maple syrup, and peanut butter and mix until well combined.
  • Spread the peanut butter mixture on top of the dates with a small spatula until evenly coated.
  • Use a tablespoon to place spoonfuls of the jam across the peanut butter layer. Spread it out evenly with the same spoon over your bark.
  • Melt the chocolate chips with coconut oil in 25-30 second increments in the microwave, stirring in between until melted. Pour the melted chocolate and spread it out evenly.
  • Top with flaky salt, and place in the freezer for 20-30 minutes, until the chocolate has set. Remove from the freezer, cut into squares and enjoy!

Notes

How to store: place in an airtight container and keep in the freezer for up to one month.
