This single serve blueberry crisp is the perfect easy vegan treat that you can enjoy solo. Because sometimes, all you need is a delicious, fruity dessert just for you. You only need 6 ingredients and 10 minutes of your time to put together this simple, fresh and sweet dessert. Perfect for a midweek pick-me-up or weekend sweet treat.

- 1 tsp butter softened (to grease your ramekin)
- 1/2 cup blueberries fresh
- 1 tsp cornstarch
For the Crumble:
- 3 tbsp all purpose flour
- 2 ½ tsp brown sugar packed
- 1 tbsp oats rolled or quick oats
- 3 tbsp butter, melted
- 1-2 tsp butter melted (to drizzle over crumble before baking)
Preheat oven to 350ºF.
Grease one small ramekin (4 inch) with melted butter and set aside.
Add blueberries to greased ramekin and coat in cornstarch.
In a small bowl, make the crumble by adding all ingredients together and mixing well. There should be soft chunks that hold together. Place the crumble on top of the blueberries.
Place in the oven and bake for 30 minutes.
Remove from oven and let cool for 10 minutes. Top with ice cream or enjoy as is!
