These vegan blueberry crumble bars are the perfect healthy sweet treat. They are easy to make, made with simple ingredients and taste just like store-bought bars, but even better! The blueberry filling is the perfect amount of sweetness, and the oat base and topping has the perfect texture that you will absolutely love. These bars are so easy to make because each layer is made up with similar ingredients, such as maple syrup, almond flour, oats, and coconut oil. The almond flour and gluten-free flour also makes these bars naturally gluten-free!

Ingredients you will need to make these vegan blueberry crumble bars
- Almond Flour. This will be the main dry ingredient for the crust and crumble topping for these bars. It gives them the crumbly, nutty taste and texture.
- Oats. You can use rolled or quick oats, and it will be used for the crust and crumble.
- Gluten-Free Flour. I use the Bob’s Red Mill 1:1 gluten-free flour because I find it mixes in so well with the other ingredients.
- Coconut Sugar. I prefer this sugar for this recipe because it adds a nice flavour and mixes well with the other ingredients. You can also use brown sugar, however I haven’t tried it before. It should work since coconut sugar and brown sugar are very similar.
- Coconut Oil. This is the best oil to use because it gives a flaky texture to the bars (we want them to be a bit crumbly) and also offers a sweet flavour.
- Maple Syrup. I love using maple syrup as a natural sweetener for recipes. It’s easy to use and adds such a delicious flavour!
- Blueberries. Make sure to use fresh blueberries!
- Lemon Juice. This is going to enhance the natural sweetness of the blueberries and also add a touch of acidity.
- Cornstarch. To help thicken the blueberries once they begin to cook and create a more jam-like, less watery consistency.
Equipment needed for these oatmeal blueberry bars
- Mixing Bowls. Different sized mixing bowls are perfect for this recipe, since you’ll need one for the crust and crumble topping.
- 9×9 Inch Square Pan. The perfect square pan that will make these crumble bars come out perfectly!
- Silicone Spatula. An essential in the kitchen and for this recipe! It will be used when mixing together the crust ingredients and the crumble topping, as well as spreading out the blueberry mixture over your crust before baking.

Tips on making the perfect blueberry crumble bars
- Ensure blueberry mixture is thick. When you add the fresh blueberries to the pot, keep stirring on low-medium heat and use a small spatula to check the consistency. You want it to be almost jam-like, and this is important for spreading onto the crust layer. If it is too liquidy, it can seep through the bottom layer. The cornstarch is what will help achieve this texture.
- Lightly press the crumble topping down with a spatula. I use a spoon to sprinkle the topping over the blueberry layer, then lightly go over it with a spatula to press down the oat mixture. This helps to make sure the top layer is not too crumbly and holds when cutting into them.
- Drizzle melted coconut oil over the bars before baking. After lightly pressing down the crumble topping with the spatula, it’s important to add an extra 2 tablespoons of melted coconut oil over the bars. This will help to make sure they don’t crumble and stay intact when cutting them into squares.

Place your blueberry crumble bars in an airtight container and keep in the fridge for up to one week. You can freeze these bars for up to one month.

Vegan Blueberry Crumble Bars (Gluten-Free)
Ingredients
For the Crust
- 2 cups almond flour
- 1 cup quick oats (or rolled oats)
- 1/4 cup gluten-free flour
- 1/3 cup + 1 tbsp coconut sugar
- 1/2 cup + 2 tbsp coconut oil, melted
- 1/4 cup maple syrup
For the Blueberry Filling
- 2 cups fresh blueberries
- 1 tsp lemon juice
- 1 tbsp cornstarch
- 2 tbsp maple syrup
For the Crumble Topping
- 1/3 cup quick oats (or rolled oats)
- 1/4 cup almond flour
- 2 tbsp coconut oil, melted
- 1 tbsp coconut sugar
- 2 tbsp coconut oil, melted, to drizzle over bars before baking
Instructions
- Preheat oven to 350℉.
- Line a 9×9 inch baking pan with parchment paper and set aside.
For the Crust
- To a large bowl, add all crust ingredients together and mix well with a spatula. It should stick together slightly while still being crumbly.
- Transfer crust to your baking pan and flatten with a spatula. Set aside.
For the Blueberry Filling
- To a small saucepan, add fresh blueberries, lemon juice, cornstarch and maple syrup together. Set to medium-high heat until it begins to simmer, then reduce to medium-low heat and stir continuously with a small spatula. The blueberries should begin to burst and thicken, creating a jam-like consistency. let simmer for 5-10 minutes or until thickened, turn off the heat and set aside.
- Once the blueberry filling has cooled slightly, pour over the crust and spread out evenly with a spatula.
For the Crumble Topping
- In the same large bowl used for the crust, combine all ingredients together for the crumble topping and mix well with a spatula. It should be very crumbly.
- Use a spoon to sprinkle the crumble over the blueberry filling, and sprinkle evenly over the bars. Gently press down on the crumble topping with a spatula so it is firmly in place.
- Pour the last 2 tablespoons of melted coconut oil over the bars before baking for 40 minutes.
- Once baked, remove from the oven and let cool for 30 minutes. Bars should be completely cold before cutting so they do not crumble.
- Cut into bars or squares and enjoy!
