Ingredients required to make your vegan chocolate chip cookie skillet

  • Vegan Butter. You can use any butter of your choice, vegan or not, and make sure it’s melted!
  • Brown Sugar. The brown sugar should be packed well into your measuring cup before adding it to your mixing bowl.
  • Granulated White Sugar. The white sugar mixed with brown sugar adds the perfect texture to this cookie skillet, and gives it that perfect crispy edge of every good cookie.
  • Ground Flaxseed. This will be used as our egg replacement, because the cost of eggs has been so high lately, and flaxseeds are high in fibre and omega-3s!
  • Vanilla Extract. For that delicious hint of vanilla flavour.
  • Salt. Just a pinch to help enhance the sweetness and balance out the cookie flavour!
  • All-Purpose Flour. Make sure to use the spoon-and-level method so that you are not packing in extra flour into your measuring cup. This ensures the cookie skillet stays light and fluffy, without adding extra flour.
  • Baking Powder + Baking Soda. To help your cookie become extra soft and fluffy while it’s baking!
  • Chocolate Chips. Because this wouldn’t be a cookie without chocolate chips! You can use any chocolate chips of your choice, or a chopped chocolate bar!

Equipment you’ll need to make this vegan cookie skillet

  • Skillet. I would recommend using a 12 inch skillet for this recipe since the cookie is not extremely large. Do not go smaller (around 5 inches) because the cookie will not be fully cooked through in the middle.
  • Spatula. Having a large and small spatula is key to making this recipe. I love using the larger spatula to mix the ingredients together, and the smaller spatula to get any excess dough out of the mixing bowl and to press it into the skillet.
  • Mixing Bowls. Having the right mixing bowls makes the preparation for the cookies so much easier! I love choosing from the different sized mixing bowl so I use the right size for every recipe I make.

Tips on making the most decadent cookie skillet

  • Whisk the butter and sugars well. Using either a whisk or hand mixer, make sure to whisk the melted butter, brown sugar and white sugar until combined. You do not want to have any clumps of sugar in your dough and to have everything properly mixed.
  • Do not over-mix. Make sure you fold in the dry ingredients until just combined. This will cause the skillet cookie to become very flat and not be fluffy. Over-mixing will aerate the dough, meaning you are adding air to it. This will make the cookies rise and fall, resulting with a flat chocolate chip cookie skillet.
  • Add extra chocolate to the top of the skillet as soon as you remove it from the oven. Once the cookie skillet is done baking, add a few extra chocolate chip pieces to the top. This will give that melted chocolate chip look to the cookie, and add more ooey gooey goodness to your cookie! This tip is optional, but highly recommended.

How to store your chocolate chip cookie skillet

Place in an airtight container and keep in the fridge for up to one week. You can also freeze this skillet cookie by keeping it in an airtight container for up to one month.

Ingredients
  

  • 1/3 cup vegan butter melted
  • 1/4 cup brown sugar, packed
  • 2 tbsp granulated white sugar
  • 1 flax egg (1 tbsp ground flaxseed meal, 3 tbsp warm water)
  • 1 tsp vanilla extract
  • 1/4 tsp salt
  • 1 cup + 1 tbsp all-purpose flour, spoon and level method
  • 1/2 tsp baking powder
  • 1/4 tsp baking soda
  • 1/2 cup chocolate chips

Instructions
 

  • Preheat oven to 350℉.
  • Grease a skillet (cast iron or oven-safe skillet) with olive oil or butter and set aside.
  • In a small bowl, prepare your flax egg by mixing ground flaxseed meal with water. Set aside for 5 minutes.
  • To a medium-sized bowl, whisk melted butter, packed brown sugar, and white sugar together until well combined and no clumps remain.
  • Add the flax egg, vanilla extract, and salt and mix until combined.
  • Add flour, baking powder, and baking soda and mix until 80% of the flour has been combined.
  • Add the chocolate chips, and mix until just combined, and no flour chunks remain.
  • Pour cookie batter into skillet and bake for 20 minutes, or until edges brown slightly.
  • Optionally add additional chocolate chips to the skillet promptly once it comes out of the oven, and add flaky sea salt before enjoying.

Notes

How to store: Place in an airtight container and keep in the fridge for one week.
