These vegan pumpkin energy balls make the absolute perfect snack to enjoy when you're feeling hungry. They are packed with protein and amazing ingredients like chia seeds and hemp hearts to keep you full throughout the day. All you need is 8 simple ingredients and 20 minutes of your time, and you've got the healthiest, easiest snack ever!

Ingredients
  

  • 1 cup rolled oats
  • 1 tbsp hemp seeds
  • 1 tbsp chia seeds
  • 1/3 cup maple syrup
  • 1 scoop Good Protein pumpkin spice latte protein powder about 5 tbsp (you can use any protein powder you'd like)
  • 1/2 cup natural smooth peanut butter
  • 3 tbsp pumpkin puree
  • 1/2 cup chocolate chips

Instructions
 

  • Line a baking tray with parchment paper and set aside.
  • In a bowl, combine all ingredients together and mix with a spatula until well combined.
  • Using a tablespoon, scoop the dough and roll out with your hands into a ball and place on parchment paper. Repeat for remaining dough.
  • Place tray of energy balls into the fridge to set for about 30 minutes. Remove from the tray, place in an airtight container and store in the fridge for up to 2 weeks.
  • Enjoy!

Notes

How to store: Place in an airtight container in the fridge for up to two weeks. You can also store them in the freezer for up to one month.
