This granola date bark is the perfect sweet treat to keep stashed in your freezer! It’s the perfect mix of chewy and crunchy, and the best sweet and salty combo that will have you walking back to your freezer for more. It starts with a soft layer of Medjool dates, smooth peanut butter, crunchy granola (that’s also high-protein) and velvety smooth melted chocolate.

Ingredients you will need to make this granola date bark

  • Medjool Dates. Pitted and cut in half on one side. Medjool dates work best here because they are so soft and can be easily flattened with a rolling pin.
  • Smooth Peanut Butter. You can use any nut or seed butter for this! If you’d prefer a crunchy nut/seed butter, you can definitely use that instead.
  • Granola. I used the Coconut Cacao Protein Granola from One Degree Organic Foods. Any type of granola works, but I love this one because of the flavour and extra boost of protein! I love this brand because they contain ingredients with 100% transparency. You can trace back where the ingredients come from and feel good about what you’re consuming.
  • Chocolate Chips + Coconut Oil. You can also use a chocolate bar if you prefer, just ensure to melt it with some coconut oil so it melts smoothly and can easily be poured over your bark.
  • Flaky Salt. Optional, but it ties together the sweet and salty flavours of this granola date bark.

Tips on making the best granola date bark

  • Press your dates together before rolling out with a rolling pin. Cut the dates lengthwise on one side and remove the pit. Press to open up the date and place on a lined baking tray. Repeat for the other dates, then firmly press the edges together so that you have an easier time rolling out the dates with a rolling pin.
  • Place a parchment paper over your dates before rolling. We don’t want all the dates getting stuck to the rolling pin, so make sure you place a parchment paper on top and then roll out the dates so they become a thin layer.
  • Gently spread the chocolate on top of the granola layer. After flattening your dates and spreading on the peanut butter, sprinkle the granola on top. Pour the chocolate over and carefully, using a small spoon, spread the chocolate around so it covers the entire bark. Make sure to not spread too hard otherwise you will mix the chocolate with the peanut butter (not bad to do this, but you won’t have separate layers).

Place granola date bark pieces in an airtight container and keep in the freezer for one month.

Ingredients
  

  • 12 whole Medjool dates pitted and sliced lengthwise on one side
  • 1/2 cup peanut butter
  • 2/3 cup One Degree Organics Coconut Cacao Sprouted Protein Granola
  • 3/4 cup chocolate chips
  • 1 tsp coconut oil
  • Flaky salt to top

Instructions
 

  • Line a small baking tray with parchment paper. Cut dates open lengthwise and press each one down, making sure they overlap slightly so they stick together. Place another piece of parchment paper over the dates and use a rolling pin to flatten the date layer.
  • Spread the peanut butter on top of the dates with a small spatula until evenly coated.
  • Sprinkle granola over entire peanut butter layer.
  • Melt the chocolate chips with coconut oil in 25-30 second increments in the microwave, stirring in between until melted. Pour the melted chocolate and spread it out evenly.
  • Top with flaky salt, and place in the freezer for 20-30 minutes, until the chocolate has set. Remove from the freezer, cut into squares and enjoy!

How to store: Place date bark in an airtight container and store in the fridge for up to one month.
