This crunchy pistachio and pear salad is the perfect thing to make as the weather begins to warm up. It’s filled with the perfect mixture of flavour and different textures, and is great as a side or enjoyed as a meal with protein mixed in or on the side. Every bite is filled with crunch from the pistachios, lettuce, pomegranates, and shallots, plus some chewiness from the dried pears. Trust me, you will want to make this salad every week!

Ingredients to make this crunchy pistachio and pear salad
- Lettuce. Any lettuce will do, I used a spring mix.
- Shallots. I love using shallots instead of onions because the flavour is slightly mild and sweet. Plus, it has that subtle hint of garlic – what’s not to love!
- Green Onion. Clearly I love the flavour of onions without the actual vegetable lol! This also offers a more mild flavour, but slightly more pungent than the shallot.
- Dried Pears. This is more unexpected but such an incredible add-on. I used Nutterie dried pears and chopped them up into smaller pieces. It adds so much texture and a hint of sweetness to this salad. Definitely don’t skip this ingredient!
- Roasted Pistachios. I love a mix of texture in my salad, so if there’s some chewiness I need some crunch to balance it out! Roasted unsalted pistachios are such a great option, and I love the vibrant green it adds to this salad.
- Pomegranate. Since there’s lots of onion/garlic flavours in this salad, I had to balance it out with some sweetness. Pomegranate is one of my favourite things to add to a salad. It’s so fresh, bursting with flavour and such a fun addition.
- Feta. Is it really a salad if you didn’t add feta or any type of cheese? (You can use a vegan/non-vegan version!)
- Fresh Pear. Any type will work (Bartlett, Anjou, etc). I like adding the fresh pear mixed with the dry for the contrast of texture and flavour.
- Spices + Olive Oil. Whip up a quick and delicious dressing with olive oil, apple cider vinegar, tahini, salt and pepper, and dried parsley.

Tips on making the perfect pistachio pear salad
- Prep all your ingredients. It’s so much easier to assemble when all the ingredients are prepped beforehand. Then all you need to do is assemble and eat!
- Finely dice/chop your veggies. I know this isn’t necessary, but I prefer having everything finely chopped so it mixes well into the salad, and you can get a little bit of everything in every bite!
- Use a handheld electric frother to whisk your salad dressing. I know it’s normally used for coffees or drinks, but it blends salad dressings so well! Especially if you’re using tahini which can sometimes get clumpy, this is a game changer.

How to store this crunchy pistachio and pear salad
If you’ve already mixed in the dressing, enjoy immediately. If you did not include the dressing, feta, or fresh pears, place in an airtight container in the fridge for up to 1-2 days. Ideally, it is best to assemble the entire salad and enjoy immediately.

Crunchy Pistachio and Pear Salad
Ingredients
For the Salad
- 2 handfuls lettuce spring mix or any lettuce of your choice
- 1 whole shallot diced
- 2 stalks green onions (scallion), chopped
- 5 pieces dried pears I used the brand Nutterie – chopped into pieces
- 1/4 cup roasted pistachios chopped (measure 1/4 cup whole)
- 1/2 whole pomegranate (half of the seeds in the pomegranate)
- 3 tbsp crumbled feta can use regular or vegan feta
- 1 whole pear cut into thin slices, to top your salad
For the Dressing
- 3 Tbsp extra virgin olive oil
- 1/2 tbsp apple cider vinegar
- 1 tbsp tahini
- 1 pinch salt and pepper to taste
- 1 tsp dried parsley
Instructions
- To a large plate or bowl, add your lettuce.
- Top with diced shallots, green onions, chopped dried pears, chopped pistachios, pomegranate, and crumbled feta. Carefully place your fresh pear slices on top of the salad.
- In a small jar or bowl, make the dressing by combining all ingredients together and mixing until well combined. You can use a handheld electric frother for the best results.
- Pour the dressing over your salad, serve and enjoy!
