This apple baked oatmeal is the perfect breakfast to meal prep. It’s great for busy mornings or when you’re craving something warm and cozy. It’s packed with good-for-you ingredients like oats, peanut butter, and protein powder to keep you fuelled all morning.

Ingredients to make this apple baked oatmeal
- Oats. You can use rolled oats or quick oats to make these.
- Hemp Hearts. For an added boost of omega-3s and protein.
- Cinnamon. For added flavour (also makes it more cozy and give it breakfast vibes).
- Protein Powder. Just a bit to boost the protein intake.
- Vanilla Extract. Adds some extra flavour, because who doesn’t love a splash of vanilla?!
- Applesauce. For added natural sweetness.
- Ground Flaxseed. This is to create your vegan flax ‘egg’. You can also use real eggs in this recipe.
- Smooth Peanut Butter. Any nut butter works here, just make sure it’s smooth so it mixes well with the other ingredients.
- Baking Powder. To help the oatmeal become fluffy while it’s baking.
- Oat Milk. Or use any milk of your choice.
- Apples. Dice one whole apple, then cut 8 thin apple slices to top each piece of your baked oatmeal.

Tips on making the best baked oatmeal
- Spray measuring cup/spoon with avocado oil before measuring your peanut butter. This has been such a game changing kitchen hack for me! It helps to get all the peanut butter out so that nothing remains on the spoon.
- Whisk all ingredients together except diced apples. Fold in the diced apples only once all the ingredients have been combined. This will make it easier to ensure everything has been well incorporated and the apples will be evenly distributed in the oatmeal batter.
- Grease the bottom of your casserole dish with avocado oil. This helps to avoid the baked oatmeal from sticking to your dish. It’s also important to let it cool completely before cutting it into squares.

Apple Baked Oatmeal
This apple baked oatmeal is the perfect breakfast to meal prep. It's great for busy mornings or when you're craving something warm and cozy. It's packed with good-for-you ingredients like oats, peanut butter, and protein powder to keep you fuelled all morning.
Ingredients
- 2 tbsp ground flaxseed (2 tbsp flaxseed + 6 tbsp warm water to create flax eggs)
- 2 cups oats rolled or quick oats
- 1 tbsp hemp hearts
- 1 tsp cinnamon
- 2 tbsp protein powder
- 1 tsp vanilla extract
- 1/4 cup applesauce
- 1/2 cup smooth peanut butter
- 1 tsp baking powder
- 1 1/3 cups oat milk or milk of choice
- 1 whole apple peeled and diced
- 8 slices apple to top each square of oatmeal
Instructions
- Preheat oven to 350℉.
- To a small bowl, create your flax egg by combining ground flaxseed with warm water. Let it sit for 5 minutes.
- In a large bowl, combine all your ingredients together except the apples. Whisk until well combined.
- Fold in the diced apples with a spatula until evenly incorporated.
- Grease a rectangular baking dish, then pour in the oatmeal mixture. Top with 8 thin apple slices (every apple slice will be in the center of each piece of baked oatmeal).
- Bake the oatmeal for 55 minutes at 350F or until the center is fully cooked and a toothpick comes out clean.
- Let cool completely before cutting into 8 pieces.
- Top with yogurt, more apple slices, maple syrup, and enjoy.
