Ingredients needed to make these high protein rice cake bars

  • Rice Cakes. I love adding rice cakes because they make these bars super crunchy! If you are also trying to eat low carb high protein, then this snack is perfect for you!
  • Protein Powder. I used the Good Protein Salted Caramel flavour, but you can always use any flavour of your choice. I love Good Protein because they are a vegan brand, the texture is so smooth, and has 21g of protein per scoop. They have so many flavours to choose from and are so delicious!   • Peanut Butter. This will help to mix together the rice cake pieces and protein powder together to form a sticky mixture. You can use any nut or seed butter of your choice!
  • Maple Syrup. To add a bit of sweetness to the salty mixture.
  • Chocolate Chips. Any chocolate chips or chocolate bar works, as long as it is just chocolate (i.e. no almond pieces inside, otherwise it will not melt properly).
  • Coconut Oil. I love adding coconut oil to melt my chocolate because it makes it super smooth and creamy.

Equipment used to make these vegan rice cake bars

  • Loaf Pan. This is how you will achieve the bar shape when making these rice cake bars. Of course you can always use a square pan, should you wish to cut these into smaller pieces. But this loaf pan is ideal for this recipe, and also great for any granola bar, banana bread or other protein bar recipes!
  • Mixing Bowls. You’ll need to use a few different sized bowls for this recipe, and having assorted mixing bowls will come in handy! I love that these also have a non-slip grip on the bottom of the bowls.
  • Chef Knife. You want to get the perfect cut on these rice cake bars, especially since there is melted chocolate on top. Having the proper knife will help to make sure you cut these bars perfectly without them breaking!

Tips on making the best high protein rice cake bars

  • Make sure the rice cakes are broken into small chunks. In order to make the mixing process easier with the rice cakes, protein powder, peanut butter and maple syrup, make sure the rice cakes are broken into small pieces. I would say to try and keep them the size of half your thumb, if that makes sense!
  • Keep the bars in the freezer until the chocolate has just frozen. I would not keep the bars in the freezer for hours before cutting as it might make it more difficult. Freeze them for at least 30 minutes, checking to see if the chocolate has frozen completely. That’s when you know they’re ready to cut!
  • Pass the knife under warm water before cutting. This will heat up your knife so that it glides effortlessly between the bars. Just pass the blade under hot water, dry it completely and cut!

Ingredients
  

For the Base

  • 5 whole rice cakes, broken into pieces
  • 1 scoop protein powder, I used Good Protein Salted Caramel, or flavour of choice (44 gram scoop)
  • 1/3 cup maple syrup
  • 1/2 cup peanut butter

For the Chocolate Topping

  • 1 cup chocolate chips
  • 1 tsp coconut oil

Instructions
 

  • Line a loaf pan with parchment paper and set aside.
  • To a bowl, break your rice cakes into small pieces.
  • To the same bowl, add protein powder, maple syrup and peanut butter and mix well until combined. It should be sticky and hold together.
  • Transfer the rice cake mixture to your loaf pan and press down evenly. Place in the freezer while melting the chocolate topping.
  • To a bowl, add chocolate chips and coconut oil. Melt in the microwave in 25-30 second increments, stirring in between until fully melted.
  • Pour chocolate on top of the rice cake mixture and let it set in the freezer for 20 minutes. Cut and enjoy!
