An absolutely delicious, healthy, and high protein treat! You absolutely need to make this because it’s so easy to make, it’s no bake, and helps you hit your protein goals while enjoying some dates and chocolate. That’s a win if you ask me!

All the ingredients you will need to make this peanut butter and jelly date bark

  • Medjool Dates. Medjool dates have such a perfect texture for date bark in my opinion. They’re so tender, juicy, and sweet!

  • Maple Syrup.Just for some added sweetness, and to help bind the protein powder and peanut butter together to create a smooth consistency.
  • Peanut Butter. Make sure to use a natural, creamy peanut butter so it spreads evenly over your dates.
  • Berry Jam. I used a store-bought strawberry jam, but you can use any berry flavour of your choice (raspberry, mixed berry, etc). You can also opt to make your own jam and include it here!
  • Chocolate Chips. I like using a semi-sweet flavour so that it doesn’t make this date bark overly sweet. You can use any type of chocolate of your choice – chocolate chips or a bar works!
  • Coconut Oil. The coconut oil will help when you melt the chocolate and give it a velvety smooth texture.
  • Flaky Salt. This is optional, to top your date bark. I highly recommend this because it brings out the sweetness from the chocolate, and gives a sweet and salty combination that is so delicious!

  • Chef Knife. The chocolate and peanut butter mixture can get quite frozen, and having the proper knife to cut the bark into pieces will make a big difference!
  • Rolling Pin. I like using a thinner rolling pin to roll out the dates. It’s easier to handle when pressing into the pan, and using a rolling pin will ensure your dates are extremely flattened.
  • Mixing Bowls. You know I love a good set of mixing bowls. They’re practical to have in the kitchen and I use them for basically every recipe! This set is so great because they’re non-slip and come with lids!

Tips on making the best peanut butter and jam date bark

  • Flatten your dates. Cut them open to remove the pit, then flatten them down until you make a row and overlap the dates with each other. It’s important you press them together slightly before rolling them out with a rolling pin.
  • Place parchment paper over your dates before rolling them. Do not just use the rolling pin over your dates. They are extremely sticky and will stick to your rolling pin instead of getting flattened. Place your parchment paper on top of the date layer, then roll it out and press hard to stick your dates together.
  • Place the jam in dollops on top of the peanut butter layer. Place the spoonfuls of jam far away from each other on your bark, then use a spoon to spread it out evenly.

Place the peanut butter and jelly date bark pieces in an airtight container and store in the freezer for up to one month.

Ingredients
  

  • 12 whole Medjool dates, pitted & flattened
  • 1 scoop Good Protein Peanut Butter protein powder (1 scoop = 44 grams)
  • 2 tbsp maple syrup
  • 1/2 cup creamy peanut butter
  • 3 tbsp strawberry/raspberry jam or homemade jam
  • 1/2 cup semi-sweet chocolate chips
  • 1 tsp coconut oil
  • optional flaky salt, to top

Instructions
 

  • Line a small baking tray with parchment paper. Split dates open and press each one down, making sure they overlap slightly so they stick together. You can add another piece of parchment paper over the dates and use a rolling pin to flatten the date layer.
  • To a small bowl, combine the protein powder, maple syrup, and peanut butter and mix until well combined.
  • Spread the peanut butter mixture on top of the dates with a small spatula until evenly coated.
  • Use a tablespoon to place spoonfuls of the jam across the peanut butter layer. Spread it out evenly with the same spoon over your bark.
  • Melt the chocolate chips with coconut oil in 25-30 second increments in the microwave, stirring in between until melted. Pour the melted chocolate and spread it out evenly.
  • Top with flaky salt, and place in the freezer for 20-30 minutes, until the chocolate has set. Remove from the freezer, cut into squares and enjoy!

Notes

How to store: place in an airtight container and keep in the freezer for up to one month.
