Ingredients to make this single serve vegan blueberry crisp

  • Blueberries. I recommend using fresh blueberries here. However, you can use frozen if you prefer!
  • Cornstarch. This helps to make the blueberries creamy while they bake in the oven.
  • All-Purpose Flour. The flour will be used to make the crisp topping. I have not tried using other flour here, but if you’d like to make this gluten-free, a 1:1 alternative should work!
  • Brown Sugar. Make sure it is packed in your measuring spoon!
  • Oats. Quick oats or rolled oats would work here.
  • Vegan Butter. The vegan butter will be combined in the crisp mixture, and also added on top of the blueberry crisp before baking.

Tips on making the best vegan blueberry crisp

  • Coat your blueberries in cornstarch. The cornstarch will help to thicken the blueberries while they bake and prevent them from getting soggy.
  • Mix your flour & oat topping in a separate bowl. This will ensure that you evenly mix all the ingredients before adding it on top of the blueberries.
  • Top the blueberry crisp with a bit of extra butter before baking. I like doing this so that the top of the crisp doesn’t get too dry. It keeps it soft, moist and perfect chewy when you take that first bite.

How to store this blueberry crisp

I recommend enjoying this as soon as it’s done baking since it is single serve, however you can place it in the fridge covered or in an airtight container for up to 4-5 days.

Ingredients
  

  • 1 tsp butter softened (to grease your ramekin)
  • 1/2 cup blueberries fresh
  • 1 tsp cornstarch

For the Crumble:

  • 3 tbsp all purpose flour
  • 2 ½ tsp brown sugar packed
  • 1 tbsp oats rolled or quick oats
  • 3 tbsp butter, melted
  • 1-2 tsp butter melted (to drizzle over crumble before baking)

Instructions
 

  • Preheat oven to 350ºF.
  • Grease one small ramekin (4 inch) with melted butter and set aside.
  • Add blueberries to greased ramekin and coat in cornstarch.
  • In a small bowl, make the crumble by adding all ingredients together and mixing well. There should be soft chunks that hold together. Place the crumble on top of the blueberries.
  • Place in the oven and bake for 30 minutes.
  • Remove from oven and let cool for 10 minutes. Top with ice cream or enjoy as is!
