Ingredients to make this cowboy caviar with hot sauce dressing

  • Black-Eyed Peas. One entire 540 ml can is perfect for this recipe.
  • Black Beans. Use a 540 ml sized can.
  • Sweet Kernel Corn. You can use a whole 341 ml can.
  • Jalapeño. Optional if you like a little extra spice.
  • Medium Red Onion. The red onion adds such a nice flavour to this, so definitely use this vs a yellow onion.
  • Yellow Bell Pepper. Any colour pepper works here, so use red, orange, or yellow.
  • Green Onion. Make sure to slice them thinly so it mixes perfectly into the cowboy caviar.
  • Roma Tomato. Helps to add so much freshness and flavour to this cowboy caviar.
  • Avocado. Adds extra creaminess to this recipe!
  • Fresh Parsley. I am one of the people that believes cilantro tastes like soap, but if you love it, feel free to add it in here!
  • Tortilla Chips. Perfect for serving.
  • Olive Oil. The base oil for the cowboy caviar dressing.
  • Lime Juice. Helps to add some sweetness and tang to the dressing.
  • Garlic Cloves. Adds extra flavour!
  • Sriracha Hot Sauce. For that extra spice and tang.
  • Honey. To add some sweetness and make the dressing a little sticky.
  • Salt + Pepper. To taste, of course.

  • Food Chopper. So great for chopping the veggies all the same size!
  • Cutting Board. A good cutting board will make chopping and prepping everything a breeze!
  • Bowl. An aesthetic, clean white bowl is perfect to add all these veggies and beans to make the cowboy caviar.
  • Chef’s Knife. For anything that needs to be cut without the food chopper, having a proper chef knife will make prepping veggies so much easier.

Tips on making cowboy caviar with the ultimate hot sauce dressing

  • Chop your veggies with a food chopper. This helps to get all the veggies in uniform pieces/size. So when you toss everything together everything is evenly cut.
  • Whisk the dressing together until fully emulsified. There may be a slight separation between the oil, honey and hot sauce when you begin whisking. Make sure you continue to mix until everything is well combined.
  • Top with additional parsley or cilantro before serving. The fresh herbs can get lost when you mix the cowboy caviar together, so if you want more freshness just add a bit more once everything is tossed together.

Ingredients
  

For the Cowboy Caviar:

  • 1 can black-eyed peas (540 ml)
  • 1 can black beans (540 ml)
  • 1 can sweet kernel corn (341 ml)
  • 1 whole jalapeno sliced (optional)
  • 1 whole medium red onion diced
  • 1 whole yellow pepper diced
  • 2 whole green onions diced
  • 2 whole Roma tomatoes diced
  • 1 whole avocado diced
  • 1 bunch chopped fresh parsley or cilantro
  • 2 cups Tortilla chips for serving

For the Dressing:

  • 1/4 cup olive oil
  • 1 whole lime juiced
  • 2 whole garlic cloves minced
  • 2 tbsp Sriracha hot sauce
  • 1 tbsp honey
  • 1 pinch salt and pepper to taste

Instructions
 

  • To a large bowl, combine all the cowboy caviar ingredients together.
  • In a small bowl, make the sauce by whisking together all the ingredients until completely emulsified.
  • Pour the sauce over your bean mixture and toss until the dressing is evenly incorporated.
  • Serve with tortilla chips.
