These double chocolate high protein cookies are such a simple recipe to make for when you’re craving a sweet treat, just for yourself. They are vegan, high protein thanks to the protein powder in these cookies, and make a small batch of three cookies. It’s the perfect amount if you want to bake and eat one right away, then save the other two for the rest of the week! They take just 10 minutes to make, made with. simple ingredients and are so decadent.
Ingredients you’ll need to make these double chocolate high protein cookies
- Banana. This will be used as the egg replacer and natural sweetener for these cookies.
- Maple Syrup. For some added sweetness.
- Protein Powder. I love using Good Protein Chocolate protein powder. It tastes so incredible in baked goods in my opinion, and I love that it boosts the protein content in these cookies (so it doubles as a dessert or snack!) - All-Purpose Flour. I haven’t tried this recipe with another type of flour, and the all-purpose flour mixes in well with the other ingredients.
- Baking Powder + Baking Soda. To make the cookies become super fluffy.
- Chocolate Chips. Because they’re a necessity in any cookie.
Tips on making these small batch double chocolate high protein cookies
- Combine all wet ingredients first. Mash your banana well, until no chunks remain. Then add in remaining wet ingredients and whisk together.
- Stir in dry ingredients one at a time. Because this is a small batch recipe and the ingredient quantity is less than a regular recipe, you want to make sure you mix everything well together so no chunks remain, and that the dough stays soft.
- Slightly flatten your cookies before baking them. These cookies do not flatten much when baking, so patting them down gently with a spatula or your hand before baking will ensure they will be less rounded once baked.
How to store these double chocolate high protein cookies
Place them in an airtight container and store in the fridge for 5-7 days. They’re best to enjoy as soon as possible, and I love reheating them slightly before eating them after I stored them in the fridge.
