If you’re looking for an easy, elevated no bake snack, these healthy apple nachos are for you! This recipe is perfect for when you want to have a fruit, but with something extra to it. These apple nachos are loaded with melted chocolate, a drizzle of nut butter, some chopped up dates, pretzels and cashews. With every bite, you get a perfect mixture of sweet and salty, to satisfy your snack craving.

Ingredients to make these vegan apple nachos

  • Apples. I love using Honey Crisp, but any type of apple will work.
  • Melted Chocolate. You can melt some chocolate chips with coconut oil in the microwave. I used about 1/2 cup, so I had enough to cover all the apples.
  • Hazelnut Butter. If you don’t want to use any type of nut/seed butter, you can use caramel sauce. I have a homemade caramel sauce recipe that I used for my caramel apple bark recipe.
  • Dates. Using Medjool dates is key for this, because they are super soft and juicy. They’re easier to chop in pieces and practically melt in your mouth when you eat them!
  • Cashews. You can roughly chop up cashews or any other nut of your choice.

Tips on making these healthy apple nachos

  • Arrange all your apple slices in one layer. Try not to stack too many apple slices directly on top of yourself to ensure each slice is evenly coated with toppings. Unless you prefer to have some bare, I suggest using a larger plate to avoid this.
  • Chop your dates into smaller pieces. Keeping them small will allow you to have them more dispersed on each apple slice.
  • Melt your chocolate chips with coconut oil. This keeps the chocolate staying smooth. The easiest way is to place it in a bowl and microwave it in 25-30 second increments, stirring in between.

How to store your leftover apple nachos

Place any leftover apple nachos in an airtight container and store in the fridge for 1-2 days.

Ingredients
  

  • 3 whole Honey Crisp apples, sliced (or any apple of your choice)
  • 6 whole pretzels, crushed
  • 3 whole dates, pitted and chopped into pieces
  • 4 tsp hazelnut butter (or caramel sauce)
  • 4 tsp melted chocolate (Melt 1/2 cup chocolate chips with 1 tsp coconut oil and melt in the microwave in 25-30 second increments)
  • 2 tbsp cashews, chopped

Instructions
 

  • Wash and dry your apples, then cut into slices. Assemble on your plate.
  • Top your apples with crushed pretzels, and chopped dates.
  • Drizzle hazelnut butter and melted chocolate on top of the apple slices. top with chopped cashews and enjoy!

How to store: place in an airtight container and keep in the freezer for 1-2 days.
