This vegan caramel apple bark is the perfect dessert to celebrate fall. It is so easy to make, takes only 10 minutes of prep time, and is the perfect sweet and salty snack to have while the weather begins to cool down. All you need is some chocolate, coconut oil, apples, pretzels, and an easy, homemade peanut butter caramel sauce that is so tasty and creamy.
Ingredients needed to make this healthy caramel apple bark
- Chocolate. You can use a chocolate bar or chocolate chips, and you will melt this with some coconut oil to make the base chocolate layer for this bark.
- Pretzels. This will go over the melted chocolate and add a crunchy layer to this bark. It also adds the perfect balance of salty to this sweet treat.
- Apple. I used a Gala apple, but you can use any flavour of apple that you’d like! What’s cool about adding apples to this bark is that they don’t completely harden in the freezer, so you don’t have to wait that long when you want to eat it. I call that a win!
- Homemade Vegan Peanut Butter Caramel. I know the other recipes that have gone viral online say to melt the caramel candies and use this as your sauce, but you can make a healthier version! Just combine some organic smooth peanut butter, coconut oil, and maple syrup together in a saucepan and you have the tastiest caramel sauce ever.
Are there any substitutions for this easy caramel apple bark?
- You can definitely use any chocolate of your choice, I prefer to use semi-sweet, but any flavour works!
- As I mentioned previously, any apple variety works as well. I have seen others use Granny Smith, so you can definitely pick the apple of your choice.
- Lastly, for the peanut butter caramel sauce, you can definitely get any store bought caramel if you’d like! If you can find a vegan version especially, then go for it! You can also use Dulce De Leche if you want to opt for a non-vegan version (or if you can find a vegan version too!).
Tips on making this caramel apple bark with pretzels
- Melt your chocolate in the microwave in 25-30 second increments with coconut oil. The coconut oil will help the chocolate become more smooth, and the 25-30 second increments will prevent the chocolate from hardening. Always ensure to stir in between each increment so the chocolate will become very smooth and easy to spread.
- Chop your apple into small pieces. I prefer this method because it will be easier to eat and easier for you to cut this vegan caramel apple bark into pieces. If the chunks are too large, it may be harder to eat. Having small, evenly cut pieces makes it easier to toss on top of your melted chocolate and makes it easier to cut and enjoy.
- Reserve 1/4 of your melted chocolate. This extra chocolate you melted will be drizzled on top of all your ingredients for an extra indulgent flavour!
How to store this vegan caramel apple bark
Place the caramel apple bark in the freezer in an airtight container for up to one month. Let it stay out at room temperature for about 5-10 minutes before enjoying.

Vegan Caramel Apple Bark
This vegan caramel apple bark is the perfect dessert to celebrate fall. It is so easy to make, takes only 10 minutes of prep time, and is the perfect sweet and salty snack to have while the weather begins to cool down. All you need is some chocolate, coconut oil, apples, pretzels, and an easy, homemade peanut butter caramel sauce that is so tasty and creamy.
Ingredients
- 1 cup semi sweet chocolate chips
- 1 tsp coconut oil
- 24 pretzels, whole
- 1 apple, your flavour of choice (diced)
Homemade Vegan Peanut Butter Caramel
- ½ cup smooth natural peanut butter
- 3 tbsp maple syrup
- 2 tbsp coconut oil, can add more or less depending on how liquidy your peanut butter is
Instructions
- In a small saucepan, add in all the caramel sauce ingredients and set to medium temperature. Whisk everything together until combined. Keep your heat to low-medium for 3-5 minutes. We just want the peanut butter caramel sauce to be warm and super smooth! Remove from the heat and set aside. If you notice the sauce becomes hard, add some extra coconut oil to thin out.
- Line a small baking tray with parchment paper and set aside.
- Chop up one apple into small pieces and set aside.
- Melt your chocolate chips with coconut oil in the microwave in 25-30 second increments, stirring in between until fully melted. Pour 3/4 of the chocolate on your baking tray and spread out evenly.
- Place your pretzels onto the melted chocolate.
- Add chopped apples on top of the melted chocolate and pretzels.
- Drizzle your peanut butter caramel sauce over the chopped apples.
- Drizzle your remaining 1/4 of melted chocolate on top of your bark, then place in the freezer to harden for about 20-30 minutes.
- Remove from the freezer, cut and enjoy!

How to store: Place caramel apple bark in a container and keep in the freezer for up to one month.
Note: You can use store bought caramels for the caramel sauce if you don’t want to make it yourself! If you can find vegan caramel candy, simply melt this to drizzle on top. However, if you don’t care for a vegan version, you can use any caramel of your choice! I hope you enjoy 🙂
